You can swap one color in an image for another when recording it. You can only swap one color.
There are many models having a same function in other canon cameras. -
I don’t think it would have been the camera. I believe they shot the video as normal and edited it on a PC using appropriate software, a program such as ‘after effects’ would be more than capable of editing a video in such a manner.
But in short - The camera didn’t do it. The computer did
